The South Pacific region is made up of bunches of small islands, including Fiji and Micronesia, the Solomon Islands and Samoa, but you needn’t be a geography bee champion to recognize the delicious culinary delights that region is famous for. Capitalizing on chicken and rice as the most child-friendly foods, we’ll introduce familiar foods in some unfamiliar ways. For example, Pork Kabobs are skewered with fresh pineapple and served with Rice Porridge a popular side dish similar to familiar fried rice. We’ll use coconut milk in a saucy Chicken Curry that is sure to become a family favorite and tastes nothing like the coconut you may be more familiar with. Sticky Rice Pudding with fresh mango slices is perfect for breakfast or dessert and will highlight some of the simplicity of foods from that region. Did I mention Hawaii is in the South Pacific, too? We’ll bake a few Dim Sum Almond Cookies (contains no nuts, but does use pure almond extract), too. Look for the region’s answer to teriyaki chicken in Shoyu Chicken with Pineapple Salad, too. A wealth of tastey, better-for-you recipes that highlight the fresh tastes of the South Pacific.
