If we were to go back to my great-grandmother's cookbook, we'd surely find a recipe for "Pound Cake". Imagine a cake as heavy and dense as a brick, made with a pound of butter, a pound of sugar and a pound of flour, without any leavening! Although the idea of it sends shudders through me, it makes the perfect platform for teaching weight versus volume in a culinary math class! What if we were to use the same basic concepts of a "Pound Cake" and make the more modern version with the most accurate methods? We’ll use but weight and volume measures to bake a moist, flavorful cake, not quite airy, but light...Lemon Pound Cake . When we use a little creativity, we’d make Fresh Strawberry Topping using the same methods. Being mad-with-math the way that we are, we’ll also use some math skills to determine how long we’ll need to cook our Roast Chicken with stuffing, too. Math is so much more fun when you get to eat it, afterwards…
